Sweet Potato Chickpea Bowl

Ingredients
- 1/2 cup onion, - chopped
- 1 clove fresh garlic, - minced
- 3/4 cup sweet potato, - peeled and chopped
- 1/2 cup chickpeas, cooked
- 1/2 cup zucchini, - chopped
- 1/4 cup peas, fresh or frozen
- 1/4 cup fresh parsley, - chopped
- 1/4 cup Dill White Bean Dip
- 1/2 tsp paprika, - optional
- 1 Tbsp nutritional yeast, - optional
- 1/8 tsp sea salt, - more or less to taste
Instructions
- Saute or steam the veggies, adding the chickpeas and bean dip (thinned out with a bit of water if you like) with extra seasonings as sauce.
