Pear and Sweet Potato Casserole
Spice up your holiday menu with this pear and sweet potato casserole, to take the place of the average sweet potato casserole. It's handy to put in the oven while you prep the rest of your holiday spread, or cook in advance and simply reheat.
Servings: 6 servings
Ingredients
- 2 sweet potato, peeled and diced, or squash
- 1 cup pear, chopped
- 1 Tbsp lemon juice
- 2 Tbsp raisins, or dried cranberries
- 1/2 tsp nutmeg
- pinch ground cardamom, optional
- pinch ground cloves, optional
- 1/4 cup fresh parsley, chopped (or 1 Tbsp dried)
Instructions
- Preheat the oven to 350 degrees F.
- Toss the sweet potato with the rest of the ingredients, and put them in a casserole dish that has a lid.
- Put the dish in the oven for 30-40 minutes. Make sure the sweet potatoes are soft and fully cooked.
