Orange Glazed Root Vegetable

Traditionally, people cooked with root vegetables more In the winter, since they are able to be stored over the season. But they're still great for us to cook with in the colder months since they are also warming and grounding. Choose whatever roots you enjoy, but try to get variety. Roasting them in the oven brings out their natural sugars for a delicious meal, accentuated here with orange.

Ingredients

Orange Glaze

  • 1 orange, zested and juiced
  • 1 Tbsp olive oil
  • 1 Tbsp tamari
  • 1 Tbsp fresh ginger, grated & juiced
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp paprika

Veggies

  • 2 cup beet, peeled and sliced
  • 2 cup carrots, sliced
  • 2 cup parsnips, sliced

Instructions

  • Start by mixing the sauce ingredients together and setting them aside to let the flavors combine.
  • Once the vegetables have been sliced, put them in a baking dish, pour the sauce over them and put them, uncovered, in an oven at 350 degrees F. Roast them until they are soft, which will take about 45 minutes Stir them every 15 minutes or so to keep them moistened with the sauce.
