Matcha Lime Chia Pudding

This is a decadent and rich dessert, and is super healthy at the same time! It's a refreshing and beautiful way to finish off a summer meal.

Ingredients

  • 1/2 lime, zest and juice (or a full one if you want)
  • 2 tsp matcha green tea powder
  • 1 1/2 cup coconut milk
  • 1 Tbsp unrefined sugar, or maple syrup, or 10-15 drops liquid stevia
  • 2 Tbsp chia seeds, whole or ground

Instructions

  • Blend all ingredients in a blender until smooth and no chunks remain.
  • Chill in the fridge for about 30 minutes, then serve topped with one or more of the topping ideas.

Notes

Topping ideas:
- Blueberries, blackberries, sliced strawberries
- Coconut whipped cream
- Toasted unsweetened coconut
