Matcha Lime Chia Pudding
This is a decadent and rich dessert, and is super healthy at the same time! It's a refreshing and beautiful way to finish off a summer meal.
Servings: 4 servings
Ingredients
- 1/2 lime, zest and juice (or a full one if you want)
- 2 tsp matcha green tea powder
- 1 1/2 cup coconut milk
- 1 Tbsp unrefined sugar, or maple syrup, or 10-15 drops liquid stevia
- 2 Tbsp chia seeds, whole or ground
Instructions
- Blend all ingredients in a blender until smooth and no chunks remain.
- Chill in the fridge for about 30 minutes, then serve topped with one or more of the topping ideas.
