Cuc-Avo-Mint Smoothie

Ingredients

  • 3/4 cup cooked quinoa
  • 1 cup cucumber
  • 1/2 avocado
  • 2 Tbsp fresh mint
  • 1/4 lime, juiced
  • 1/2 cup alfalfa sprouts
  • 2 Tbsp pumpkin seeds
  • 1 cup water

Instructions

  • Puree everything in a blender until smooth, adding enough water for the consistency you enjoy in your smoothie.

Notes

Unless you have a high-powered blender, this will have some texture to it - think of it kind of like bubble tea.
This is also lovely as a salad if you prefer, with the avocado mashed with lime and mint for a dressing.
