Cuc-Avo-Mint Smoothie

Ingredients
- 3/4 cup cooked quinoa
- 1 cup cucumber
- 1/2 avocado
- 2 Tbsp fresh mint
- 1/4 lime, juiced
- 1/2 cup alfalfa sprouts
- 2 Tbsp pumpkin seeds
- 1 cup water
Instructions
- Puree everything in a blender until smooth, adding enough water for the consistency you enjoy in your smoothie.
Notes
Unless you have a high-powered blender, this will have some texture to it - think of it kind of like bubble tea.
This is also lovely as a salad if you prefer, with the avocado mashed with lime and mint for a dressing.
