Coconut-Dill Dressed Cucumber Salad

Ingredients
Dressing Ingredients
- 1 cup coconut milk
- 2 cloves fresh garlic, pressed
- 1/2 lemon, zested and juiced
- 1 Tbsp dill, fresh or dried
- pinch black pepper
- 1/2 Tbsp onion powder, or a small amount of grated onion or chopped green onion
Salad Ingredients
- 3 cup cucumber, chopped
- 1 cup celery, chopped (optional)
Instructions
- Prepare your dressing in a bowl large enough to hold your salad by mixing all of the ingredients together.
- Add the vegetables, toss and serve! I told you it was easy.
