Coconut-Dill Dressed Cucumber Salad

Ingredients

Dressing Ingredients

  • 1 cup coconut milk
  • 2 cloves fresh garlic, pressed
  • 1/2 lemon, zested and juiced
  • 1 Tbsp dill, fresh or dried
  • pinch black pepper
  • 1/2 Tbsp onion powder, or a small amount of grated onion or chopped green onion

Salad Ingredients

  • 3 cup cucumber, chopped
  • 1 cup celery, chopped (optional)

Instructions

  • Prepare your dressing in a bowl large enough to hold your salad by mixing all of the ingredients together.
  • Add the vegetables, toss and serve! I told you it was easy.
