Applesauce Jicama Salad
This makes a refreshing meal on a hot summer evening - it’s crunchy, slightly sweet and pairs wonderfully with the addition of apples and raisins. Since jicama is very hard, it’s easiest to grate – especially if you have a food processor with a grating blade.
Servings: 4 servings
Ingredients
- 1 jicama, grated
- 2 carrots, grated
- 1 apple, chopped
- 1/2 cup almonds, chopped
- 1/2 cup raisins
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
Dressing
- 1/2 cup applesauce, or pureed apple
- 1/2 cup tahini, or other nut/seed butter
- 1/4 cup balsamic vinegar
- 2 Tbsp dijon mustard, optional
- 2 Tbsp maple syrup, optional
- 1/4 cup water, if needed, for consistency
Instructions
- Toss the salad ingredients in a large bowl.
- Whisk together the dressing ingredients in a small bowl, or puree in a small blender or food processor.
- Toss the dressing with the salad, and serve over a bed of greens, in a lettuce or whole grain wrap, on the side of a veggie burger or just dig in with a fork 🙂
