Apple Cranberry Crumble and Date Squares

Just the Apple Crumble Recipe:

Prep time: 15 min. Cook time: 20-25 min.
Time from start to eating: 35-40 min.
Makes 6 servings.

Ingredients

  • 2 apples, chopped
  • 1 cup cranberries (fresh or frozen)
  • 1-2 Tbsp unrefined sugar (coconut, date, sucanat, palm, maple syrup)
  • 1 tsp cinnamon
  • pinch salt
  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 2 Tbsp unrefined granular sugar (coconut, date, sucanat, palm)
  • 2 Tbsp unsweetened flaked coconut
  • 1/4 cup cold water or fruit juice (apple or cranberry would be best)

Directions

  1. Preheat the oven to 350 degrees F.
  2. Put the fruit in a baking dish and sprinkle with the sugar, cinnamon and a pinch of salt.
  3. Mix together the ingredients for the topping, and pour the water or juice on to moisten it. Spread the topping over the fruit, and put the dish in the oven, uncovered.
  4. Bake for 20-25 minutes, or until the fruit is soft and the topping is lightly browned.

  • 1-2 Tbsp unrefined sugar (coconut, date, sucanat, palm, maple syrup)
  • 1 tsp cinnamon
  • 1/2 cup dates (pitted)
  • 1/2 cup unsweetened flaked coconut
  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 2 Tbsp unrefined granular sugar (coconut, date, sucanat, palm)
  • 1/4 cup cold water or fruit juice (apple or cranberry would be best)

Directions

  1. Preheat the oven to 350 degrees F.
  2. Mix the oats with the sugar and cinnamon, then spread them in a baking dish.
  3. Puree (or mash) the dates and coconut, and then spread it evenly over the oat base.
  4. Mix together the ingredients for the topping, and pour the water or juice on to moisten it. Sprinkle the topping over the dates, and put the dish in the oven, uncovered.
  5. Bake for 20-25 minutes, or until the fruit is soft and the topping is lightly browned.
