Orange Cinnamon Sweet Potatoes

Ingredients

  • 2 cups sweet potato, peeled and cubed
  • pinch sea salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 orange, peeled and chopped
  • 4 Tbsp coconut, unsweetened flakes

Instructions

  • Put the sweet potato in a large pot with a small amount of water, and rub in some salt. Bring to a boil, covered, and then turn down to simmer and let the sweet potatoes steam until they're soft.
  • Stir in the cinnamon, nutmeg, and orange pieces. Sprinkle the coconut on top, and serve.
