Mushroom Ginger Nori Snack Rolls

These nori snack rolls are the perfect answer for a salty, savory snack that's healthy instead of relying on chips - and they're really quick to put together!
- 2 sheet nori
- 1 Tbsp nut/seed butter, or other nut butter
- 1 Tbsp tamari, soy sauce
- 1 cup mushrooms, sliced
- 1/2 cup carrots, grated, optional
- 1 Tbsp pickled ginger
Preheat the oven to 350F.
Mix together the nut butter and tamari, until smooth.
Lay a nori roll out on a rolling mat, and spread the nut butter mixture at the far end, leaving enough space to seal the roll.
Lay a row of mushroom slices, grated carrot and ginger along the near end and roll up.
Put the rolls in a oven for 10-15 min or in a toaster oven on toast/broil for 3-4 min.
Slice the rolls into 3 smaller pieces and serve as a snack or an appetizer.
