Mushroom Ginger Nori Snack Rolls

These nori snack rolls are the perfect answer for a salty, savory snack that's healthy instead of relying on chips - and they're really quick to put together!

Ingredients

  • 2 sheet nori
  • 1 Tbsp nut/seed butter, or other nut butter
  • 1 Tbsp tamari, soy sauce
  • 1 cup mushrooms, sliced
  • 1/2 cup carrots, grated, optional
  • 1 Tbsp pickled ginger

Instructions

  • Preheat the oven to 350F.
  • Mix together the nut butter and tamari, until smooth.
  • Lay a nori roll out on a rolling mat, and spread the nut butter mixture at the far end, leaving enough space to seal the roll.
  • Lay a row of mushroom slices, grated carrot and ginger along the near end and roll up.
  • Put the rolls in a oven for 10-15 min or in a toaster oven on toast/broil for 3-4 min.
  • Slice the rolls into 3 smaller pieces and serve as a snack or an appetizer.
