Classic Pizza Dough

- 1 cup whole grain flour, plus more for kneading
- 1 Tbsp yeast
- 1/2 tsp sea salt
- 1 tsp unrefined sugar
- 1 Tbsp olive oil
- 1 cup water
Prehead the oven to 400F.
Combine the flour, yeast, sugar and salt in a bowl. Make a well in the center and add the oil, then the water.
Bring the dough together and add water or flour as necessary to make a soft dough.
Knead for 5 minutes, leave to rise for 30 minutes. Then press or roll out into pizza crust shapes.
Lay the crusts on a baking sheet, and put them (plain) in the oven for 10 minutes, or until they start to get a light color. If you like, you can sprinkle some coarsely ground millet or corn flour on the baking sheet before you lay the crusts down.
Then put your sauce and toppings on the crust, and bake again as a pizza.
