This is a recipe that uses several of the techniques for making vegetables taste good, PLUS puts them in the form of pizza which can single-handedly break through those picky taste buds with the fun factor.

Spicy Black Bean Pizza Recipe

Spicy Black Bean Pizza

Makes: 2 pizzas.
Prep Time: 5 min. Cook Time: 10-20 min.

Black Bean Dip Ingredients

  • 1 can black beans (or 1/2 cup dried, fully cooked)
  • 1 lime, zested and juiced
  • 1 Tbsp tamari
  • handful fresh cilantro, chopped
  • 1 tsp cumin
  • pinch ground cayenne

Pizza Ingredients

  • 2 whole wheat pitas, or other pizza crust
  • 1 cup spicy black bean dip
  • 1 tomato, thinly sliced
  • 1 green onion, chopped
  • 1 carrot, grated
  • 1 avocado, sliced

Black Bean Dip Directions

  1. Rinse and drain the beans. Put the beans in a food processor (best choice) or blender (works ok), along with the lime zest & juice and the tamari, with about 1/4 cup of water.
  2. Blend until this is smooth, then blend in the fresh cilantro and spices. If your blender is not mixing things well at the consistency of your dip, simply transfer it to a bowl once the beans have been blended and stir in the spices instead.

Pizza Directions

  1. Spread some spicy black bean dip on the pita. Lay the tomatoes on, with a pinch of black pepper if you like. Sprinkle the green onions on top, then the carrots. You may want to massage the carrots with a pinch of salt first, to make sure they don’t dry out.
  2. Pop the pizza in the oven at about 350 degrees F for 10-20 minutes, or until it’s heated up to your taste.
  3. Finally, top your pizza with sliced avocado, and another sprinkle of black pepper.

    I made this on whole wheat tortillas and it satisfied my pizza craving! Pizza must be my comfort food.
