You might not believe me, but ice cream can give you a healthy energy boost if you do it right! Bananas give you B vitamins and potassium, and fruit is full of vitamins and minerals. The sugars are natural, so they give you a slower burn and avoid the blood sugar spike of regular ice cream.

This is the easiest, fastest ice cream you’ll ever make. Faster than going to the store for Haagen Dazs. And you don’t have to feel guilty, it’s totally healthy.

Candy Cane Superfood Ice Cream

Makes: 2 servings.
Prep Time: 5 min.

Ingredients

  • 1 banana, peeled and frozen
  • 1/2 cup frozen raspberries
  • 1/4 cup fresh mint (optional)
  • 1/4 cup goji berries (optional)
  • 1/4 cup (approx measure) water, or pure juice (cranberry is nice)

Directions

  1. Put all of the ingredients in a food processor and puree until smooth and creamy. It looks really pretty topped off with a sprinkle of coconut.
