Tahini Dressing

This tahini dressing can make the base of an infinite number of flavor variations for your meals. I've spiced it with Indian flavors, but it also goes really well with balsamic, fresh basil and garlic.
- 1/4 cup apple cider vinegar
- 1/4 cup tahini
- 1/4 cup water, add more or less for consistency
- 1 Tbsp tamari, soy sauce
- 1/4 tsp toasted sesame oil
- 1/2 tsp ground ginger
- 1/2 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp turmeric
Whisk together the tahini and apple cider vinegar until it becomes thick and creamy. Add some water and stir it in to combine thoroughly. Start with less water if you like a thicker dressing, and add water until you get the consistency you like.
Stir in the tamari, sesame oil and seasonings and whisk together until smooth. Drizzle over your favorite salad, leave it thick as a dipping sauce, or stir it into some cooked beans for a creamy sauce.
