Sweet Summer Salad Dressing

On a warm summer day there is something incredibly appealing about enjoying a sweet, fresh green salad out in the sun. This one uses nectarines as a base for a creamy dressing. Using nut butter can help you absorb the nutrients from your veggies better.
- 1 peach, or nectarine
- 1 clove fresh garlic, pressed
- 1/4 cup fresh basil
- 1 Tbsp nut/seed butter, or tahini for nut-free
- 1 Tbsp apple cider vinegar
- pinch sea salt
- pinch paprika
Puree the nectarine in a blender or food processor with about 1/2 a cup of water.
Add the rest of the ingredients and blend again until smooth and creamy.
Toss the dressing with a salad, or try using it thick and creamy as a dip.
