Sesame-Dressed Aduki Salad

Ingredients

  • 1 15oz can aduki beans, or blackeyed peas or other small bean
  • 1 avocado, chopped
  • 1 bell pepper, any kind, chopped
  • 1 cucumber, chopped
  • 1 cup snow peas, or snap peas, chopped
  • 1-2 beet, cooked, peeled, and chopped
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp tamari, soy sauce
  • 1 tsp fresh ginger, grated

Instructions

  • Toss everything together in a large salad bowl.
