Pineapple Coconut Macaroons

Ingredients

  • 1 banana, mashed
  • 1/4 cup chia seeds, or ground golden flax seeds
  • 1 tsp almond extract
  • 1 Tbsp maple syrup, or brown rice syrup
  • 1 cup coconut, unsweetened
  • 1/4 cup crushed pineapple, drained

Instructions

  • Mix everything together thoroughly.
  • Drop by spoonful, slightly spaced.
  • Refrigerate until firm.
  • Keep them chilled in an air-tight container up to 1 week.
