Pineapple Coconut Macaroons

- 1 banana, mashed
- 1/4 cup chia seeds, or ground golden flax seeds
- 1 tsp almond extract
- 1 Tbsp maple syrup, or brown rice syrup
- 1 cup coconut, unsweetened
- 1/4 cup crushed pineapple, drained
Mix everything together thoroughly.
Drop by spoonful, slightly spaced.
Refrigerate until firm.
Keep them chilled in an air-tight container up to 1 week.
