Oatmeal Date Squares

- 1 cup steel-cut oats, cooked measure
- 1-2 Tbsp unrefined sugar
- 1 tsp cinnamon
- 1/2 cup dates, pitted
- 1/2 cup coconut, unsweetened
Topping
- 1 cup rolled oats
- 1/2 tsp cinnamon
- 2 Tbsp unrefined sugar
- 1/4 cup cold water, or fruit juice, apple or cranberry would be best
Preheat the oven to 350 degrees F.
Mix the steel-cut oats with the sugar and cinnamon, then spread them in a baking dish.
Puree (or mash) the dates and coconut, and then spread it evenly over the oat base.
Mix together the ingredients for the topping, and pour the water or juice on to moisten it. Sprinkle the topping over the dates, and put the dish in the oven, uncovered.
Bake for 20-25 minutes, or until the fruit is soft and the topping is lightly browned.
