Lettuce Wraps with Spicy Black Bean Dressing

Salad Ingredients
- 2 cups lettuce, whole leaves
- 1 cup carrots, grated
- 1 cup beet, boiled and grated
- 2 cups zucchini, grated
- 2 Tbsp green onion, chopped
- 1/4 cup fresh parsley, or cilantro, chopped
- 2 Tbsp coconut, unsweetened
Dressing Ingredients
- 1/3 14oz can black beans, equals 1/2 cup cooked measure
- 1/2 lime, zest + juice, or 1 Tbsp concentrate
- 2 Tbsp water
- 1/2 tsp cumin
- 1 clove fresh garlic, pressed
- pinch cayenne pepper
- pinch sea salt, or Herbamare, to taste
Toss the vegetables of the salad together in a bowl, drizzled with dressing. Spoon some of the veggie mixture into a piece of lettuce, and wrap or fold. You can also make a regular salad if you like.
For the black bean dressing, rinse and drain the beans. If you’re using dried beans, they must be fully cooked before you begin.
Puree the beans with the lime juice, zest and water until it’s smooth. Mix in the spices and garlic, and taste for seasoning. Add salt to bring the flavors together.
