Lettuce Wraps with Spicy Black Bean Dressing

Ingredients

Salad Ingredients

  • 2 cups lettuce, whole leaves
  • 1 cup carrots, grated
  • 1 cup beet, boiled and grated
  • 2 cups zucchini, grated
  • 2 Tbsp green onion, chopped
  • 1/4 cup fresh parsley, or cilantro, chopped
  • 2 Tbsp coconut, unsweetened

Dressing Ingredients

  • 1/3 14oz can black beans, equals 1/2 cup cooked measure
  • 1/2 lime, zest + juice, or 1 Tbsp concentrate
  • 2 Tbsp water
  • 1/2 tsp cumin
  • 1 clove fresh garlic, pressed
  • pinch cayenne pepper
  • pinch sea salt, or Herbamare, to taste

Instructions

  • Toss the vegetables of the salad together in a bowl, drizzled with dressing. Spoon some of the veggie mixture into a piece of lettuce, and wrap or fold. You can also make a regular salad if you like.
  • For the black bean dressing, rinse and drain the beans. If you’re using dried beans, they must be fully cooked before you begin.
  • Puree the beans with the lime juice, zest and water until it’s smooth. Mix in the spices and garlic, and taste for seasoning. Add salt to bring the flavors together.
