Ingredients

cooked quinoa

spinach
1/2
cup
cucumber
1/2
cup
carrots
1/2
cup
avocado
1/2
lemon

fresh garlic

Instructions
Chop the veggies, grating the carrot if you want it easier to digest.
Mash or puree the avocado with the garlic (pressed) and lemon until smooth. Add some water to make more of a dressing if you like.
Top the quinoa with the veggies and the dressing.
Notes
Add a little pinch of cayenne or chili powder to the avocado mixture to give this some spice and help stimulate your digestion.
