Beet Red Smoothie

Ingredients

  • 1/2 cup cooked quinoa
  • 1 cup beet, cooked
  • 1/2 avocado
  • 1/2 cup spinach
  • 2 Tbsp fresh mint
  • 1/2 lime
  • 2 Tbsp nut/seed butter

Instructions

  • Puree everything in a blender until smooth, adding water as you want or need. The cooked beets and quinoa should give a heartiness to this smoothie, and a balance to all the fruit-based ones.

Notes

Unless you have a high-powered blender, this will have some texture to it. I think of it kind of like bubble tea. Be sure to used chilled quinoa, from the batch cooked earlier this week, as warm quinoa doesn’t work too nicely in a smoothie.
The cooked beets and quinoa give a heartiness to this smoothie, and the avocado is a balance to fruit-based smoothies. You can also feel free to have this meal as a salad rather than blending it into a smoothie, with a squeeze of lime juice for dressing.
