You can make these on a weekend, to have on hand for grab n go snacks through the week. While it's easy to buy a box of granola bars, they usually have honey (which isn't vegan) as a binder. Plus, you know exactly what's going in, and can customize to your favorite add-ins.
- 1/2 cup peanut butter , (or almond, cashew, sunflower, etc)
- 1/4 cup maple syrup
- 1/4 cup protein powder, or ground almonds
- 1 1/2 cup rolled oats
- 1/4 cup dried cranberries
In a large bowl, mix together the peanut butter and syrup until smooth.
Add the remaining ingredients, and mix together thoroughly.
Press the mixture into an 8 x 8” tray, and put in the fridge to set for about 15 minutes. Cut into bars.
